ICMR-NIN's Dietary Guidelines explained for Food

According to ICMR, if you are making lentils, then boil it in a pressure cooker or in another utensil. Doing this, the enzyme inhibitors present in the lentils are finished. By which the lentils and its nutrients are well digested in the body.
